5 Healthy Breakfasts For Girls Who Can't Even


If you "literally can't even" in the morning, but want to honor your body through food that fuels you well, not crashing mid day AND still want to reach your goals, girl I got you. I'm sorry, I had to do the title. While you'll never hear the words " I literally can't even" come out of my mouth..I do literally get the struggle with having a healthy breakfast when you're time crunched or simply don't know what to do. Have no fear, SCR is here to break down five quick and simple options for you!

1.) Fifty shades of oatmeal. Serious right now, this is your most basic and simple option. Especially during the winter when warm food is extra nice on those crazy cold mornings. Here are my favorites: -Overnight oats: 1/2 cup uncooked oatmeal mixed with 1 cup almond milk, 2 packets stevia + cinnamon to taste. Cover and refrigerate overnight. Add mix ins in the morning: fruit, nuts, protein powder, nut butter, cacao nibs. Eat cold! -Hot oatmeal: make as directed then top with fruit, nuts, chia seeds, nut butters ect -Premade at the store so you don't have to do anything? Why not! Find one with minimal ingredients! -Starbucks! On the go and forgot yours? Grab their PLAN oatmeal, add in your own protein powder and ask for nuts and dried fruit on the side! image image

2.) Smoothies! Oh smoothies how I love you! These can keep you full for HOURS, if you make them right. Here's my solid base that you can add and change to for different flavors: 1 cup almond milk 1 cup ice 1 scoop vanilla protein powder 2 cups spinach 1 cup fruit 2 TBSP healthy fat (nut butter OR coconut oil) OR 1/2 avocado (yes seriously) image

3.) Granola bowl. Yo, if I can wake up at 4:30am to get to work and I do it with a TODDLER you can throw some yogurt, granola, stevia and a fruit in a container so it's ready to go in the morning!

4.) Leftovers. No I'm not kidding. I don't know who the asshole is that said eating meat for breakfast is weird, but he should be punched in the nuts. I LOVE throwing veggies + chicken sausage + sweet potatoes in the oven, making them nice and crispy and have meals for the WHOLE week. This is such a delish breakfast option!!! You could do this with breakfast sausage if you're too weirded out by chicken in the morning. My boyfriend says my early AM meat eating habits are "not normal" to people outside of the fitness world, I beg to differ. Try it out! IMG_0626

5.) When all else fails, have some hard boiled eggs on hand. When I'm in a pinch, 3 eggs + fruit and maybe some nuts hold will me over for a few hours until I can become one with the world and prepare a bigger meal!

Healthy Fruit Pizza


I LOVE pizza. Pretty much any kind of pizza, unless anchovies are involved--I'm DTE (down to eat). I also love fruit, and breakfast. I guess you could say I pretty much love all foods, but for the purpose of this recipe I'll get to my point. I wanted to create a breakfast (or dessert) pizza that could be eaten guilt free. I had breakfast in mind when I started so I opted to create the crust out of oatmeal. This turned out so awesome and would make the perfect breakfast/dessert.



  • 1/2 cup rolled oats + 1/4 cup oat flour (blend oats
  • 1 whole egg + 1 egg white
  • 2 tbsp. almond milk
  • 3 packets stevia
  • 1/2 tsp maple or vanilla extract
  • 1/4 tsp baking soda

For topping:

  • 1 cup greek yogurt
  • 2 packets stevia
  • 1/4 tsp cinnamon
  • 1/2 cup fruit of choice
  • 1/4 cup nuts of choice (optional)


  1. Preheat oven to 350
  2. In a bowl mix all of the liquids. Eggs, milk, extract.
  3. Add in rolled oats, then the oat flour and baking soda.
  4. Cover a pan in wax paper and pour the mixture onto the paper into a circle shape.
  5. Bake at 350 for 15-20 min or until golden brown
  6. Let cool then remove "crust" from pan and onto plate
  7. Mix the ingredients for the icing (listed above) and spread on the crust. Add the fruit and enjoy:)

Kodiak Cakes Pancake and Waffle Mix

If you follow me on instagram you know I've been having either waffles or pancakes made from this mix DAILY. They are just so fluffy and delicious. This week I made maple bacon pancakes, with actual bacon cooked in them. It was AMAZING. Recipe is on my instagram: @strongchicksrock. Also did some double chocolate chip ;)

The Sauna

Anyone else obsessed with the sauna? It's my new favorite way to end my workout. I love sweating and I feel like its 100% helping my complexion.

Magic Oil

Ok, so this awesome women reached out to me on instgram when I posted a picture of me getting electric stim on my low back. I've been having some serious low back pain due to my anterior pelvic tilt. She commented and said she had a blend of essential oils called "Magic Oil" that would alleviate my pain. Growing up with my super crunchy nana who would make us chew garlic, use oils and ward of fluoride like the devil..I knew I had to jump on this as I'm all for a holistic approach to pain management and health in general. I just got it a few days ago and OH MY GOSH.

I kid you not this lives up to its name 100%. I rubbed it on (my skeptical husband as my witness) and felt almost immediate relief. I've used it on my knee, my shoulder and my back the past few days and I can happily say I've been pain free! You can buy it here.

Truth Tuesday!


It's Tuesday but feels like Wednesday...but anyway let's get down with some truth. Truth: I'm beyond obsessed with Trader Joes cookie butter. I'm having it every single morning on an Ezekiel bread English muffin and it is SO good. I actually can't stand peanut butter but this is the perfect little treat for me!


Truth: I love yoga. I had an awesome class last week and it was perfect, I went Sunday though and was so sore from yoga/lifting all week that I definitely wasn't intentional with my practice. I focused more on the pain I felt than my breathing and I left feeling really disappointed with myself. Constantly reminding myself to not judge my own practice and to continue exploring and loving the journey. It's no easy task, but I'm determined not to quit.


Truth: This pisses me off. "No sugar added" but then it's artificially sweetened. People wonder why I'm so passionate about kids nutrition, and I could talk about this for days. There are so many things wrong with this picture but first and foremost fruit shouldn't be sweetened. It's natures dessert and sweet enough already! Aside from the chemical shit storm in children's foods and snacks, I thinks it's crucial that people in general, not just parents, pay more attention to the food we put in our body. Honor your body with foods that give it light, fuel it well and make you feel good! image

Healthy Maple Breakfast Sausage & Egg Muffins


Happy Valentines Day! This morning I stirred up lots of love in the kitchen and made two of my favorite breakfast foods! The Applegate brand carries a maple and sage breakfast sausage that I LOVE but they are $5 for only 3-4 servings which are super I set off to make my own!

You'll need:

1lb ground turkey 1 1/2 tsp Thyme 1 1/2 tsp Sage 2 tbsp Maple syrup 2 tbsp Coconut sugar Salt to taste

How: 1. Heat a pan to medium 2. Throw ALL of the ingredients in a bowl and mix together thoroughly 3. Form small patties and cook on each side for about 3-4 min or until cooked through


Egg Muffins

What you'll need: (This is for one serving)

4 egg whites 1/2 tsp Italian seasoning 3 tbsp shredded cheese

How: 1.preheat oven to 400 2.Mix together ingredients and pour in muffin tin--bake at 400 for 10-15 min.

Before you think I'm all about that egg white life--stop! IM A YOLK LOVER to my core. You know how they say eggs are healthy? They are, and all of the vitamins and nutrients come from the yolk. Healthy fat? The yolk is FULL of it! So by all means you can use four WHOLE eggs (probably 3 will do)! I chose to not have the yolks this morning because I know I'll be cooking the rest of the day and will be making some yummy treats, and since it's a special occasion I'd rather get my fats from those sources (AKA: Cookie Butter) than! See, we don't gain weight from eating fats, carbs or any macronutrient. We gain weight from eating too much of any macro. So occasionally I'll opt to play around with my fats and avoid some during breakfast or dinner to enjoy more of another fat latter. Does that make sense? I don't want to confuse you guys and I'd be happy to talk about this more with you!

Also, feel free to get creative with the egg muffins. I like to add onions, broccoli, bacon, blue cheese..literally any meat or veggie would be good in there!
